This national French winter classic is not for the timid appetite.
We start by cooking Great Northern beans with smoked pork bones, seared slab bacon and garlic sausage. We then assemble the cassoulet in a baking dish layered with beans, slab bacon and garlic sausage followed by adding in Portuguese and andouille sausage. Finally we add our house duck confit and top it with toasted breadcrumbs and bake till a crusty lid forms.
This traditional French dish is perfect for a cold day.
